Empanada de verduras arguiñano
Wfpb empanadas
If you’ve never tried samosas, India’s most popular snack, you’re missing out on something great. These triangular-shaped pasties can be filled with meat, egg, cheese, cheese, vegetables and more. We have opted for vegetables and prepared a simple filling, with a touch of very exotic spices.
The outer wrapper consists of a dough of wheat flour and yeast, seed oil and sometimes seasoned with cumin. If you don’t feel like making it or don’t have time, you can always use filo or brick dough. With any of these doughs samosas come out more than worthy.
They are usually prepared fried, although there is also an oven baked version, which is healthier and more convenient (because they are made all at once). Choose the version you like best, but be sure to prepare these vegetable samosas for an original, different and delicious snack.
When we get to the middle, brush with oil the rest of the dough and continue folding until finished. Repeat the operation as many times as necessary until the filling is finished. Place the samosas on a baking tray covered with parchment paper, brush with a little more oil and bake in the oven, preheated to 200 ºC with heat up and down, for 18-20 minutes or until golden brown.
Vegetarian empanadas puff pastry
I have fond memories of my childhood when we used to travel to Mallorca to visit family during the Easter vacations. My grandmother and aunts would spend a lot of time in the kitchen preparing «empanadas» and other traditional Easter dishes so that we could all enjoy them together during a big family meal.
Traditional Mallorcan empanadas are usually made with meat and peas. My vegan version of the Mallorcan empanadas replaces the meat with cauliflower and red peppers, keeping the peas from the original recipe as the main ingredient.
